Capsicum is the active component of chili peppers, which are plants belonging to the genus Capsicum. It is an irritant for mammals, including humans, and produces a sensation of burning in any tissue with which it comes into content. Capsicum and several related compounds are called capsaicinoids and are produced as a secondary metabolite by chili peppers, probably as deterrents against certain herbivores and fungi. Pure capsicum is a hydrophobic, colorless, odorless, crystalline to waxy compound.
There are two types of capsicum oleoresin, one is oily capsicum extract and the other is water-based capsicum extract. Capsicum oleoresin is a viscous orange-red liquid with pure taste, stable performance, high spiciness content and can be well dispersed in the oil. It is widely used in the seasoning of various spicy foods or as raw materials in food factories.
