How should CBD be used in gummy candy recipes?

Jun 16, 2026

CBD gummies are currently one of the fastest-growing categories in the CBD product line. High consumer acceptance, easy dosage control, and ample room for flavor design-these advantages make them a top choice for many brands entering the private label market.

Developing a gummy formula is actually more difficult than most people realize. This isn't because the gummy process itself is complex, but because there are several inherent conflicts between the characteristics of CBD and the gummy production process. Improper handling of these conflicts directly impacts product quality.

imageWater-soluble vs. fat-soluble CBD?

CBD itself is a fat-soluble molecule, naturally insoluble in water. This poses a fundamental challenge to gummy formulations-the main component of gummies is gelatin or pectin plus syrup, a water-based system.

Adding regular CBD isolate (fat-soluble) directly to a gummy candy formula presents several problems: uneven distribution of CBD particles in the syrup system leads to significant differences in CBD content between different gummy candies (a phenomenon known in the industry as "hot spots"); the absorption of fat-soluble CBD in the digestive tract relies on dietary fat, resulting in significantly lower absorption rates when taken on an empty stomach; and cosmetic issues such as oil separation or surface blooming may occur.

Water-soluble CBD (CBD processed through nanoemulsification or liposome encapsulation technology) fundamentally solves these problems. Water-soluble CBD can disperse evenly in the syrup system, significantly improving content uniformity and offering bioavailability several times higher than regular fat-soluble CBD.

However, water-soluble CBD is typically more expensive than regular isolate, and the nanoemulsification technologies used by different suppliers vary greatly-particle size, encapsulation efficiency, and stability at different pH levels all need to be verified. Don't order based solely on the word "water-soluble."

How to Choose: If your product is positioned as high-end and emphasizes high bioavailability, water-soluble CBD is a better choice and easier to support product claims. If cost control is the primary consideration, fat-soluble CBD isolates combined with appropriate formulation design are preferable.

High Temperature is the Biggest Destructive Factor in Gummy Production

The gummy production process must include a sugar boiling step, typically at temperatures between 110℃ and 150℃. CBD degrades at high temperatures, and the loss of activity increases non-linearly with temperature and time.

There are two approaches to addressing this problem:

Post-Addition Process: CBD is added after the sugar boiling is complete and the syrup has cooled to a certain temperature (usually below 60℃–80℃). This is currently the most common method and effectively reduces the activity loss caused by high temperatures. The disadvantage is that the syrup viscosity has increased when added at low temperatures, requiring more precise equipment and process parameters to control the mixing uniformity.

Encapsulated Protective CBD: Microencapsulated CBD raw materials are used. The wall material, to some extent, blocks the impact of high temperatures on the internal CBD, improving process tolerance. These types of raw materials are more stable under high-temperature processing, but the encapsulation rate and the choice of wall material will affect the final release efficiency.

Gelatin Gummies vs. Pectin Gummies

This detail is often overlooked.

The gelation temperature of gelatin gummies (traditional gummies) is approximately 50℃–60℃, within which CBD can be added, offering a relatively flexible operating window.

Pectin gummies (vegan gummies, targeting vegan consumers) have a different gelation mechanism, typically requiring a lower pH (adjusted with citric acid) to form a stable gel structure. This acidic environment has a certain impact on the stability of CBD.

Most Core Quality Control Indicator for Gummy Products

The deviation in CBD content per gummy is the most concerning and problematic area for B2B clients during product development.

Consumers buying 10mg CBD gummies expect each one to contain 10mg-if actual testing shows a deviation exceeding ±15% within a batch, it will be problematic under labeling compliance requirements in most markets.

There are three main factors affecting the uniformity of CBD content: the uniformity of CBD raw material dispersion, mixing time and equipment parameters during production, and the stability of molding speed and syrup temperature.

It is crucial to request suppliers to provide or assist in conducting small-batch content uniformity tests during the raw material selection stage, rather than discovering problems after mass production.

Stability

The target shelf life for CBD gummies is typically 12–24 months. Factors affecting stability include the degradation of CBD itself, the softening of the gummies due to moisture absorption, and the oxidation of CBD by oxygen within the packaging.

Using properly stabilized CBD (with added natural antioxidants such as vitamin E) can significantly slow down degradation.

An easily overlooked point: commonly used acidulants in gummies, such as citric acid and malic acid, can accelerate the acid-catalyzed degradation of CBD under high water activity conditions. If the formulation uses a high amount of acidulants, this variable needs to be closely monitored during the stability testing phase.

While gummies may seem like a low-barrier-to-entry product, the unique properties of CBD make their development far more complex than ordinary functional gummies. Raw material type, processing technology, and quality control standards all require systematic consideration; none can be neglected.
