PVP K30 is also known as polyvinylpyrrolidone K30 or povidone K30. It is a high molecular polymer polymerized by N-VinyPyrrolidone (NVP). The average molecular weight of povidone K30 is 40,000. This product is white to off-white powder, odorless, tasteless, soluble in water and ethanol, insoluble in acetone or ether. Its molecular formula is (C6H9NO)n, and the CAS number is 9003-39-8. 1) PVP itself is not carcinogenic, has good food safety, can form complexes with specific polyphenol compounds (such as tannins), and is mainly used as a clarifying agent and stabilizer for beer, fruit juice, wine, and other food in food processing.
